Filled Croissant with Egg, Cheese and Turkey

Serves: 1
Cooking time: 10 minutes

Ingredients:
1 x croissant
2 x slices smoked turkey
30g grated Swiss Emmental cheese
2 x eggs
10g butter
Salt and pepper
Fresh chopped chives

Method:
Halve the croissant lengthways using a breadknife, being careful not to go the whole way through.

On a medium heat, melt the butter in a pan.  Crack the eggs into a bowl, season with salt and pepper and whisk to combine.  Add the egg mixture to the pan and stir continuously until you have softly scrambled eggs.  Remove from heat and stir in the chives and grated Emmental cheese. Do this quickly as the eggs will continue to cook in the hot pan.

Layer 2 slices of smoked turkey on the bottom half of the croissant, then top with the delicious cheesy scrambled eggs and gently replace the top of the croissant.

Short of time? No need to miss out on something so mouth-watering. You can pick it up on your way to the office. Better still, indulge yourself; enjoy it with one of the specialty coffees at The Brass, CITY WALK.
